Chicken Poppyseed Casserole

Ingredients:

1 can of chicken (12.5 oz)
2 cans of cream of chicken (10.5 oz)
1 cup of sourcream
Ritz crackers, crushed

Topping
Ritz crackers, crushed
2 tbsp melted butter
poppyseed



Directions
Preheat oven to 350.  Mix chicken, cream of chicken, sourcream, and ritz crackers.  Pour in casserole dish.  Crush crackers on top.  Melt butter and pour over crackers and then sprinkle with poppyseed.  Cook for 30 minutes.

Corn Casserole

This is also a Paula Deen recipe.  So yummy! 

Ingredients


1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded cheddar cheese




Direction

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Paula Deen's Ooey Gooey Butter Cake

Ingredients

Cake
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Filling

1 8-ounce package cream cheese, softened
1 15 oz can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar
1 teaspoon cinammon
1 teaspoon nutmeg




Directions

Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer.  Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. 

Prepare Filling:
In a large bowl, beat the cream cheese and pumpkin until smooth.  Add the eggs, vanilla, and butter and beat together.  Next, add the powdered sugar, cinammon, and nutmeg and mix well.  Spread over cake batter and bake for 40 to 50 minutes.  Make sure not to over bake as the center should be a little gooey.

Deep Dish Pizza Casserole

Ingredients
  • 2 lb ground beef
  • 1 cup flour
  • 15 ounce jar pizza sauce
  • 1/2 cup Parmesan
  • 8 ounce mozzarella
  • 1/2 tsp salt
  • 1 cup milk
  • 2 eggs
  • 1 tablespoon oil
  • 1/2 tsp garlic salt
  • 1 tablespoon dry Italian seasoning
The good thing about this recipe is you can add any pizza topping you like such as sausage, mushrooms, pepperoni, etc. into the meat mixture. 



Preheat oven to 350. Brown hamburger. Drain well. Add garlic salt and Italian seasoning. Add pizza sauce. Stir well. Grease a 9×13 inch pan with cooking spray. Sprinkle mozzarella over bottom of it. Spread meat mixture over the cheese.  In mixing bowl, add eggs, milk, flour, oil, and salt. Pour over meat in pan. Sprinkle parmesan cheese over batter. Bake 30 minutes. Enjoy!

I am always searching for new recipes and I love looking at cooking blogs.  I am constantly having to research the internet or look through my very unorganized recipe box to try and find a recipe.  I figured this way would make it a lot easier.
